Так никогда нельзя было сделать, судя например по postgresql-7.4-alt1 (более ранней версии я не нашел).

Зачем вообще такое может быть нужно ? :)

Ну например затем, чтобы иметь установленным postgresql-devel и не переходить с psotgresql8.3-server на postgresql8.4-server.  АПВС?

Похоже, без серьёзного перепиливания пакета такое не сделать не удастся. Я не планирую этого делать.
